Pan drippings

Low-salt chicken broth

1.5 tbs fresh thyme, chopped

2 tbs all purpose flour

pinch of allspice

Preparation

Strain pan juices into large glass measuring cup. Spoon 2 tablespoons fat from the surface into medium saucepan. Spoon off and discard the remaining fat from pan juices. If necessary, add enough broth to measure 3 cups pan-juice mixture.

Heat fat in saucepan over medium heat. Add thyme and sauté until fragrant, about 1 minute. Add flour and allspice; whisk 1 minute. Simmer until gravy thickens slightly, about 5 minutes. Season to fast with salt and pepper
