Ingredients
2 thin chicken breasts
2 tbsp finely sliced green onion
1 tsp dried thyme
2 garlic cloves, crushed
6 tbsp melted butter
salt and pepper
1/4 cup lime juice
cilantro to garnish
Preparation
Place chicken in an ovenproof dish. Mix spring onion through lime juice and coat chicken with mixture. Cover the chicken lossely with saran wrap and marinate in a cool place for several hours or overnight in fridge. Preheat oven to 375 degrees. Remove saran wrap and cover dish with foil. Bake chicken for 45 minutes to 1 hour, then remove foil and cook a few more minutes until brown. Serve hot with rice, garnishing with lime juice and cilantro.
