Ingredients
32oz Beef Broth
4 Stalks of Celery Chopped
4 Large Carrots Chopped
Salt and Pepper to taste
1/2 Cup Flour
3 Lb Beef Brisket or Chuck
1/4 Cup Olive Oil
3 Potatoes Cubed
Preparation
Preheat oven to 300F. Cover bottom of Cast Iron Roasting pot with 1/4 Olive Oil, and put on stove on low heat to warm the oil. Rub meat in flour, salt and pepper mixture to coat. Add meat to pot to sear in oil. Turn to brown on all sides. Remove meat from pot and put back in flour mixture. Season and add carrots, celery, potatoes to pot to sautee. Remove Veggies, Add meat to pot, then add veggies on top. add 1/2 of the beef broth, (to cover 3/4 of the meat.) Put lid on pot and put in oven at 300F for at least 3-4 hours until meat is falling apart, the longer the better (as long as the pot has broth, adding as you cook)
