Ingredients
Hearts of Romaine Lettuce
4 Tilapia Fillets
1 Cup Whole Grain Brown Rice
1/2 each of Red, Yellow & Orange Sweet Peppers
1/4 of a Large White Onion
1 Cup Sliced White Mushrooms
4 Tbsp Olive Oil
Mrs. Dash: Vegetables - to taste
Cayenne Pepper - ground
Garlic and Herb Chicken Seasoning: Fish - to taste
1 Jar of Salsa
Preparation
Tilapia: Heat oil and then add Fish. Sprinkle Garlic and Herb Chicken seasoning along with cayenne pepper (use sparingly) on both sides of fish. Sauté for approximately 3 minutes per side.
Vegetables: Clean and chop all vegetables Sauté vegetables with oil and Mrs. Dash seasoning.
Use the lettuce in place of the tacos. Fill the lettuce as you would a taco shell add fish, vegetables, rice and salsa.
