Ingredients
Dry Rub:
2 TBSP salt
2 TBSP brown sugar
2 TBSP ground cumin
2 TBSP pepper
2 TBSP chili powder (or mesquite or ancho or any combo)
4 TBSP paprika
4 TBSP sugar
(makes enough dry rub for 3 racks, store un-used rub in a ziplock bag)
Doctored-up BBQ sauce:
1 cup purchased “smoky” bbq sauce
1/4 cup chopped fresh cilantro
3 TBSP minced red onion
2 TBSP bourbon
2 tsp chili powder
3/4 tsp cumin
3 racks of ribs
Preparation
Make dry rub and coat ribs, let marinade at least one hour. Mix barbecue sauce, cilantro, onion, bourbon, chili powder and cumin in heavy small saucepan; bring to boil, stirring occasionally.
Bake the ribs undisturbed & uncovered (bone side up) in the oven for about 2 hrs @ 325. Optionally: Finish on grill w/ BBQ sauce.
