Ingredients

4 chicken breasts

1 1/2 onion

2 garlic cloves

1-3 chipotle peppers (however spicy you like it)

2 cans diced tomatoes

Preparation

Boil chicken with onion and garlic cloves. When done, shred to pieces. In a blender combine chipotle peppers and undrained tomatoes. Blend until chunks no longer appear. In a saute pan, saute 1/2 onion until carmelized. Add onion to blended sauce. Add sauce and shredded chicken to a large pot and bring to a boil. Reduce heat to and simmer for 15 minutes.

Serve with sour cream, tostadas, lettuce, and cilantro.
