Ingredients
2 (8 oz) pkgs cream cheese, softened
2 eggs
1 tsp vanilla
3/4 cup granulated sugar
1 Tbsp lemon juice
Vanilla wafer cookies
Fruit to top
Preparation
Preheat oven to 375 degrees. Place 1 vanilla wafer in bottom of lined cupcake pan.
Mix cream cheese, vanilla, lemon juice and sugar on medium speed until smooth. Add the eggs, one at a time, beating well after each addition. Spoon mixture into cupcake pan.
Bake 15-20 minutes and top with fruit of your choice.
