Ingredients
1 lemon
1 orange
1 lime
2 Tb olive oil
1/4 tsp salt
2 Tbsp each chopped fresh mint and chopped fresh parsley
1 lb large uncooked shrimp
1 cup quinoa
2 oz goat cheese
2 Tbsp fresh basil, cut into thin ribbons
Preparation
Zest orange, lemon, and lime, juice each. Whisk together just juice, 1 Tb olive oil, salt, and 1 Tbsp each parsley and mint. Reserve Tb for dressing. Add shrimp to juice mixture and let marinate for 15 mins. Rise quinoa and cook. In skillet, grill shrimp in remaining olive oil. Do not overcook. Toss shrimp w cooked quinoa, add remaining mint and parsley. Drizzle w reserved marinade. Add goat cheese. Garnish w basil ribbons and zest.
