Ingredients
small chopped onion
olive oil
2 cups cooked brown rice
2 cups cooked lentils
3 cups cooked or raw spinach
3/4 cup plain yogurt or fat free sour cream
1 cup shredded cheese
6 flour tortilla
Preparation
Saute onion until soft. Cook in spinach if not already cooked. add rice and lentils, stir. Remove from heat. Mix in yogurt and cheese. Heat skillet. Warm tortilla, then put 2/3 cup filling, and wrap. Panini press if desired. Toast. Serve with salsa, spicy ranch, or other sauce.
