Ingredients

cooked lentils

chopped onion

minced garlic

1/2 c chicken broth

1/2 c tomato sauce

brown rice

lemon/olive oil

toppings like: feta, avocado, zucchini, eggplant, salsa, mango salsa – good way to use up veggies

Preparation

Saute onion and garlic until soft. Prepare rice. Add lentils, broth, and marinara to onion and garlic. Cook until warm. Put down cooked rice, top with lentils and toppings. Drizzle w lemon juice/olive oil.
