Ingredients

12 med cooked pranws (300g)

250g noodles (your pref on type)

3T palm sugar (or demarra)

1T lime juice

1T Light Soy Sauce

1T tomato sauce

2T mild chilli sauce

2T Fish sauce

2t peanut oil

220g chicken mince (or just chopped chihcken brest)

200g pork mince (if want)

1 clove garlic, crushed

1T freshly grated ginger

3 eggs, beaten lightly

2 green onions, sliced thinly

1 cup (80g) bean sprouts

1/2 cup (75g) roasted unsalted peanuts, chopped coarsely (often use cashews)

1/3 cup loosely packed, coarsely chopped fresh coriander

1 chilli chopped (seeded on preference)

1 red onion (optional)

Preparation

  1. Shell & devin prawns
  2. Prep noodles depending on type. Prep nuts.
  3. Combine sugar, juice & sauces into small bowl
  4. Heal oil in wok; stir-fry chicken, pork, garlic, chili, red onion & ginger until meat is cooked through.
  5. Add prawns & egg to wok, gently stir fry until egg sets.
  6. Add noodles, sauce mixture, & green onions, bean sprouts, 3/4 nuts, 3/4 coriander (remainder of both to garnish on top when serve)
