Ingredients

1 cup barley

3 cups beef broth

3 T olive oil

1.5 T balsamic vinegar

½ c chopped mint

1 chopped apple, with peel

pepper

Preparation

In saucepan, add barley and heat, stirring constantly until lightly browned, about 5 minutes. Add broth, bring to boil, then simmer for 45 minutes.

Combine olive oil and balsamic vinegar. Add to finished barley. Then add mint, apple and pepper.
