Ingredients
olive oil
salt
black pepper
garlic, minced almost to a paste
fresh, very rip tomatoes, peeled and chopped in tiny pieces
fresh basil, chopped (optional)
good Italian bread, thinly sliced
Preparation
Place the tomatoes in a bowl. Moisten them with olive oil and sprinkle with salt and pepper to taste. Add basil if you wish. Set aside. Now mix the garlic into some olive oil and brush each slice of bread with this flavored oil. Toast on both sides until the edges of the bread begin to brown. Top with a spoonful of the tomato mixture and serve.
