Ingredients

1/2 cup, more or less, of grated cheese (I like an aged cheddar, but you can use anything)

1 or 2 tablespoons of parmesan

1 tablespoon of mayonnaise to start, plus more as needed

1 spring onion, chopped

Herbs and spices to taste (I like it with a dash of cajun spice)

2 buns (ciabatta, kaiser, etc), split

Preparation

Put the cheeses in a bowl and add the mayonnaise. Mash and mix it together until it resembles a spread, adding more mayo if necessary. Once it reaches the desired consistency, mix in the spring onion and spices.

Spread the mixture over the buns. Broil the buns until the cheese melts and is a bit toasty.
