Ingredients

3 cups of sugar

1 cup of water

Preparation

Combine the sugar and water together in a saucepan. Stir with a clean metal spoon over low heat until the sugar has dissolved and the mixture becomes clear. Stop stirring and allow the mixture to come to the boil, boil for 12-15 minutes. Using a wet pastry brush, brush away any sugar crystals that have not been dissolved. Be aware that your toffee mixture will continue cooking after it has been removed from heat, cook your toffee to a light golden brown. Use to pour over roasted peanuts, fruit and nut mixture, or in patty pans.
