Ingredients

16 oz of unflavored extra firm tofu, cut into 1" cubes

For the marinade:

1 bunch cilantro leaves

3" piece of ginger root, peeled and coarsely chopped

2 small serrano chillies, stems and seeds removed and cut lengthwise

1/2 cup fresh lemon juice

1/4 cup olive oil

1/2 to 3/4 cup chopped walnuts

Salt and pepper to taste

Preparation

Using a Cuisinart or a blender, combine all the marinade ingredients together in the bowl and pulse until you get a paste that is midway between coarse and fine, so that you can still feel the crunchy texture of the walnuts.

Place the cubes of tofu in a small, flat baking dish lightly greased with olive oil or PAM and pour the marinade over the tofu until well coated.

Marinate for an hour, then bake in a pre-heated 350 degree oven for 25 mins.

Serve immediately with nutty wild rice and green beans lightly sauteed in olive oil and garlic.
