Ingredients
1 pound firm or extra firm tofu, cubed
9 ounces fresh baby spinach or frozen spinach, thawed
3 tomatoes, chopped
2 tablespoons Dr. Fuhrman’s Black Fig Vinegar or lemon juice
1/8 teaspoon cayenne
1/8 teaspoon onion powder
1/2 cup vegetable broth, no-salt-added or low sodium
Preparation
Sauté all the ingredients in the vegetable broth.
Cooked or no-salt-added canned beans may be substituted for the tofu.
