Ingredients
olive oil
one package of extra firm tofu (preferably organic)
one jar of salsa, preferably organic and with chipotle
a can of black beans, preferably organic, rinsed
monterey jack or sharp cheddar cheese, grated
flour tortillas
fresh cilantro
sour cream
Preparation
- Heat 1 tablespoon of olive oil in a non-stick skillet.
- While oil is warming, cut block of tofu into about 1/2 inch-sized cubes.
- When oil is warm but not smoking, add tofu t and cook in the oil for a few minutes.
- Add contents of salsa jar and can of rinsed black beans. Cook the tofu with salsa and black beans for about 10 minutes on medium heat, stirring on occasion.
- While the tofu is cooking, grate approximately 1 cup of monterey jack or sharp cheddar cheese and set aside.
- Add the greated cheese to the tofu/salsa/bean combination, lowering the heat and stirring to incorporate the cheese as it melts.
- Place the tofu/salsa/bean mixture into a warm flour tortilla, incorporating fresh cilantro, and roll as a burrito. If desired, add sour cream. Enjoy.
