Ingredients:
16 oz chicken broth
4 lime leaves
2 inch piece of lemon grass
1 inch piece Galangal (The “kah in the recipe- related to ginger) sliced very thin.
4 tablespoons of fish sauce
2 tablespoons of lime juice
4 oz chicken breast, cut into bite sized pieces
5 oz. coconut milk
pinch of red chili powder
cilantro leaves for garnish
Preparation
Directions:
-Heat the chicken broth.
-Add all of the ingredients except for the chicken, coconut milk, and cilantro, and bring to a boil.
-Add the chicken and coconut milk.
-Boil for 2 minutes, until the chicken is cooked, then simmer for two minutes.
-Pour into bowls, garnish with cilantro, and serve.
