Ingredients
1 pound heirloom tomatoes or vine ripe summer tomatoes
1 15 oz can canellini beans
1/4 c. fresh tarragon leaves
1 T. fresh lemon juice
3 scallions, thinly sliced
1 T. extra-virgin olive oil
Coarse salt and pepper to taste
Tuna for four people
Preparation
Combine tomatoes, beans, tarragon, lemon juice, scallions, and oil. Season with s & p. Set aside
Grill fresh tuna to personal liking; medium rare recommended. Serve tune with tomato and bean salad.
