Ingredients

2 tsp olive oil

3 garlic cloves, minced

3 c fat free broth

3/4 tsp salt

3 14.5 oz cans diced tomatoes, undrained

2 c fresh basil leaves, thinly sliced

Basil leaves (opt)

Preparation

  1. Heat oil in large saucepan over med heat. Add garlic, cook 30 seconds, stirring constantly. Stir in broth, salt, and tomatoes, bring to boil. Reduce heat, simmer 20 min. Stir in basil.
  2. Process all of the soup in blender. Garnish with basil leaves.
