Ingredients

3 firm ripe tomatoes, (red, yellow, and orange), seeded and diced

1/4 cup fresh oregano, minced

1 small clove garlic, pressed or minced

2 tablespoons extra-virgin olive oil

2 teaspoons aged Balsamic vinegar (use good quality)

1/2 teaspoon sugar

salt and freshly ground black pepper, to taste

4 ounces goat cheese, softened

toasted French bread slices or mini toasts

Preparation

Combine tomatoes, oregano, garlic, olive oil, Balsamic vinegar, sugar, salt and pepper. Allow to stand at room temperature for at least one hour. To serve, spread each slice of toast with goat cheese and top with tomato mixture. Serves 4 - 6.
