Ingredients

4 oz Italian Bread, cut into 8 slices

2 cloves garlic, peeled (or 2 tablespoons jarred, minces)

2 large tomatoes, dices

1/4 cup chopped fresh basil

1 teaspoon extra virgin olive oil

1/2 teaspoon of salt

1/4 teaspoon freshly ground black pepper

Preparation

  1. In a toaster oven or under broiler, toast the bread on both sides. Cut 1 clove of garlic in half and rub both sides of the toast with it, set aside.

  2. In small pot of boiling water, cook, the remaining garlic clove for 2 minutes to blanch. Transfer garlic to a cutting board and mince. In a medium bowl, combine the tomatoes, basil, oil, salt, pepper and the minced garlic.

  3. Arrange the toast on a platter. Dividing evenly, spoon the tomato mixture over the toast and serve. (You can also put a small amount of shredded mozzerella or parmesan cheese under or over the tomatoes and heat slightly until cheese is melted.
