Ingredients
2 tbls olive oil
2 tsp black mustard seeds
2 tsp tumeric
2 tsp ground cumin
2 long red chillies finely chopped
2 tbls grated fresh ginger
2 garlic cloves crushed
800g (1lb 12oz) tinned chopped tomatoes
100ml (3.5fl oz) malt vinegar
85g (3oz) brown sugar
a pinch of sea salt
Preparation
Heat the oil in a large saucepan over medium high heat. Add the mustard seeds, tumeric and cumin and cook, stirring for 3-4 minutes until fragrant. Add the chilli, ginger and garlic and cook further 2-3 minutes. Add the tomatoes, vinegar, sugar and salt and simmer, stirring occasionally for an hour until thick.
