Ingredients
1/2 cup rice
2 chicken breasts
1 cup diced onion
1 cup diced bell pepper
1 T minced garlic
1 t red pepper flakes
2 cups chopped tomatoes
1 cup coconut milk
1/4 cup chopped scallions
1/4 cup chopped cilantro
2 T lime juice
Preparation
Cook rice according to directions.
Saute seasoned chicken in oil in large pan over medium-high heat until browned on both sides, about 4 minutes. Add onion, bell pepper, garlic and pepper flakes. Cover and cook until onion is translucent, about 3 minutes.
Stir in tomatoes and coconut milk; cover and cook until tomatoes start to break down, 5-6 minutes. Add scallions, cilantro and lime juice, simmer 2 minutes more. Season to taste with salt.
