Ingredients

1 baguette

olive oil for brushing bread

Whipped Feta Spread:

6oz feta

2oz cream cheese (room temp)

1/3c olive oil

2T fresh lemon juice

1/2t salt

1/4t pepper

Tomato Topping:

2T minced shallots

2t minced garlic

2T red wine vinegar

1/3c olive oil

1t salt

1/2t black pepper

2lbs ripe cherry tomatoes, halved

3T minced fresh basil

Preparation

Slice baguette on the diagonal into 1/2 inch slices. Brush with olive oil; bake at 425 for 6-8 mins. Crumble feta into food processor. Add cream cheese. Pulse a few times until combined. Add olive oil, lemon juice, salt and pepper. Process until combined. Make tomato topping: Combine shallots, garlic and vinegar in a bowl and let sit for about 5 mins. Add olive oil, salt and pepper. Stir and pour over tomatoes. Let sit for 10 mins. Add basil and stir.

Spread toasts with whipped feta and top with tomato mixture. Top with a few toasted pine nuts, if desired.
