Ingredients

1 small red onion, thinly sliced

1/2 English cucumber, thinly sliced

2 beefsteak tomatoes, thinly sliced

1/2 cup pitted black olives

Sherry or balsamic vinegar, to taste

Extra-virgin olive oil, to taste

Coarse salt and freshly ground pepper

Preparation

In a medium bowl, combine onion, cucumber, tomatoes, and olives. Drizzle with vinegar and oil, as desired. Season with salt and pepper, and marinate 30 minutes. Serve chilled or at room temperature.
