Ingredients

2 Medium heirloom tomatoes

1/4 lb. Monte Enebro goat cheese (or other soft-ripened goat cheese)

1/3 lb. oil cured olives

Fresh oregano

1 Tbsp. olive oil

2 Tbsp. balsamic vinegar

Salt and pepper to taste

Preparation

Layer alternating thick slices of tomato with thin slices of cheese (the cheese has a strong flavor that goes a long way). Drizzle with the olive oil and balsamic vinegar. lay fresh oregano leaves over the tomatoes and cheese. Surround with olives and add fresh ground salt and pepper to taste.
