Ingredients
Slice onion
equal parts water and rice (I use basmati rice, but it’s up to you)
cooking oil, 2-3 tbl
tomatoes, 1 can diced
1 can black eyed peas
1 onion, diced
1-2 cloves garlic, minced
hot sauce (optional)
Preparation
saute onion in bit of oil till onion turns brown; remove onion and add rice and water. cook rice on lowest heat setting possible. cover with paper towel to trap steam and add water if needed at the end.
in the meantime, saute the onion and garlic in the oil. Add the tomatoes and cover, cooking on low heat for 5-10 min. Add peas and simmer another 5 minutes or till desired consistency reached.
Serve immediately. Can garnish with parmesan cheese, if desired.
