Ingredients
1 container cherry tomatoes, cut in half
1 carton fresh mozzarella pearls drained
1/3 cup basil, julienned
2 tablespoons fresh parsley
1/4 cup fresh lemon juice
1/4 cup olive oil
salt and pepper to taste
1 avocado, peeled and diced (do this last)
Preparation
In a small bowl whisk lemon juice, oil, salt and pepper together.
Add all other ingredients (except avocado), mix in dressing and toss to coat.
Refrigerate at least 1 hour
Right before serving chop the avocado, add to salad and toss
