Ingredients

3 tomatoes, peeled

1 medium onion, chopped

3 T. butter

1 t. salt

1/4 t. thyme

1/2 lb. swiss cheese, diced onto crust

1 prepared pie shell, ready to fill

3 eggs, well beaten

1 c. half and half cream

Preparation

Combine first 5 ingredients and cook in saucepan until reduced by half. Place diced swiss cheese in pie crust. Pour tomato sauce over cheese. Mix 3 eggs, well beaten and 1 c. cream and pour over tomato mixture. Bake 10 minutes 425 and 375 for 35 minutes.
