Ingredients
5 lb. uncooked shrimp. (Shell on)
1/2 cup olive oil
1 cup (2 sticks) salted butter
1/2 cup dry white wine
12 oz tomato paste
1/3 cup chopped/minced garlic
1/4 cup chopped rosemary (fresh)
1/4 teaspoon cayenne pepper
Salt (about 1/3t) or to taste
Black pepper (about 2/3t) or to taste
Preparation
Preheat oven to 300. In a large dutch oven, mix all ingredients except shrimp. On stove top, heat at a medium low temperature until butter melts and ingredients make a blended sauce (about 10 minutes)
Fold shrimp into sauce.
Cover and bake for about 1.5 hours stirring every 20 minutes or so.
(Note: Peeled & deveined shrimp can be used with this recipe. However, cut baking time to 1 hour.)
