Ingredients
1 cup chopped green pepper
1 cup chopped red onion
1 cup sliced celery
2 cups chopped tomatoes
Dressing:
1 cup sugar
1 tsp. salt
Dash pepper
1/2 cup canola oil
1 cup cider vinegar
1 Tbsp. dried basil
Preparation
Combine green peppers, red onion, celery, and tomatoes in a large bowl. Mix dressing ingredients together. Pour over vegetables and let it stand several hours or overnight in refrigerator. Spoon out with slotted spoon. Serve in bowl or in lettuce cups. This holds for several days.
