Ingredients

1 medium red onion, very thinly sliced, separated into rings

1⁄4 cup white balsamic vinegar

4 oz feta cheese, crumbled

3 lb mixed heirloom tomatoes, cut into chunks

1⁄4 cup plus 1⁄2 tsp extra-virgin olive oil

1⁄4 tsp each salt and freshly ground pepper

1⁄2 cup torn fresh basil leaves

Preparation

  1. In a large serving bowl, combine onion, vinegar and feta cheese. Let stand until onions have softened, about 10 minutes.

  2. Add tomatoes, 1⁄4 cup oil, salt, pepper and basil to onion mixture; toss.
