Ingredients

2 lbs fresh, ripe tomatoes, cut into large chunks or wedges

6 oz. fresh mozarela chees, sliced into 1 - inch pieces,

3 T extra virgin olive oil

1 1/2 tsp minced garlic

juice of 1/2 lime (1 1/2 tsp)

1 tsp balsamic vinegar

1/4 tsp salt

1/4 cup fresh basil, chopped

freshly ground black peppe rto taste

Preparation

Prepare tomatoes and cheese and place in large bowl. Combine remaining ingredients for the vinaigrette and pour over the tomato/cheese mixture; combine. Allow to sit for 1/2 hr before gently mixing again and serving.

Makes 6-8 servings.
