Ingredients

A small splash of olive oil (about 2 tablespoons)

About 25 garlic cloves

3 cans crushed tomatoes (I like Progresso)

Fresh basil if you have it (chop up a nice handful of leaves), otherwise use about 2 tablespoons dried

1 tablespoon dried oregano

Preparation

  1. Heat olive oil in large pot until shiny.
  2. Crush the garlic cloves into the oil, taking care not to burn.
  3. When the garlic is soft, add the tomatoes.
  4. Stir in basil and oregano.
  5. Simmer on low heat – for at least two hours – stirring about every 15 minutes.
  6. It’s done when it’s at the right thickness for whatever you are planning to use it for.
