Ingredients
2 Tbsp. olive oil
1/2 cup finely chopped onion
1 Tbsp. finely minced garlic
2 1/2 cups canned, imported tomatoes (plum type)
1 six-ounce can tomato paste
1 1/2 cups water
Salt and Pepper to taste
1 tsp dried crumbled basil
1/4 cup finely chopped parsley
1 bay leaf
1/2 tsp dried thyme
Preparation
- Heat the oil in a large saucepan or small kettle and add the onion and garlic. Cook, stirring, until the mixture is wilted.
- Add the tomatoes, tomato paste, water, salt and pepper to taste, and stir. Add the basil, parsley, bay leaf and thyme. Bring to the boil and let simmer 30 minutes.
