Ingredients
½ Onion, chopped
2 sticks Celery, chopped
1 Potato, chopped
350ml (12 floz) Tomato Juice
200ml (7 floz) Stock
½ tsp basil
60ml (2floz) of cream
butter
Preparation
Fry the onion, celery and potato in butter until onions are soft. Add Tomato juice, stock and basil and season to taste. Simmer until the vegetable are soft. Puree until smooth.
