Ingredients
1 onion, chopped
1 garlic clove, chopped
1 carrot, grated
Basil, handful
2 tbsp Olive oil
2.5 lbs ripe tomatoes, chopped
2 pints veg stock
Preparation
Heat oil in a large pot
Add onion, garlic, carrot, basil and simmer on a low heat for 20 minutes
Add tomatoes and stock and simmer for 20 minutes
Allow to cool. Puree with a blender, return to pot to reheat, adding black pepper and a little salt (if needed)
For a creamier/thicker soup add 1-2 potatoes at the start.
