Ingredients
1/4 C unsalted butter (1/2 stick)
2 14.5 oz cans unsalted dices tomatoes
1 t kosher salt
1 t pepper
1/4 t baking soda
1/2 t dried thyme
1 C fresh Orange Juice
1/2 C whipping cream
1 lg onion
Preparation
In saucepan, add butter and onion and saute until translucent. Add tomatoes, salt, pepper, baking soda, and thyme. Bring to a boil, reduce to simmer uncovered for 15 minutes. Puree in food processor or blender and return to saucepan and stir in OJ and whipping cream. Bring to simmer and adjust seasoning if necessary.
