Ingredients
2 red peppers
1 onion
4-5 gloves of garlic
1 cup chicken stock
(make your own or store bought)
3 boneless chicken breast pounded to about a 1/4" and cut in half
salt & pepper
serves 4 very nicely
Preparation
Roast peppers, I put them on the gas burner until they are all black and than wash away the black. What is left is the roasted red pepper. Julienne the roasted peppers and onions and chop garlic. Heat sauté pan to hot but not smoking, add tablespoon of oil. Add onions and pinch of salt and pepper cook stirring often until separated and soft, add garlic and cook and stir for another minute. Add peppers and chicken, stir to mix together. Add enough stock to cover all. Bring to a simmer and let simmer for about a half hour, or until chicken is cooked through. Add more stock as needed. Season to taste.
