Ingredients

18 ounces tortellini, cheese-filled

8 tablespoons olive oil

1 head broccoli

2 large red pepper

1 1/4 tablespoons garlic, minced

2 teaspoons white wine vinegar

2/3 cup white wine

Preparation

  1. Cut/break broccoli into largish bite-sized pieces, dice red pepper into ~1" pieces

  2. Cook tortelini

  3. Heat oil in frying pan, medium-high heat. Add broccoli stems and cook for a bit before adding florets and red pepper. Cook around 3-4 minutes. Add garlic and cook one minute. Add wine and vinegar and cook until alcohol is evaporated and vegs are correct. Toss in tortelini, salt and pepper to taste, and serve.
