Ingredients
3/4c. Olive Oil
1/2c. Balsamic Vinegar
1 tsp. garlic, crushed (2 cloves)
2 9oz. pkgs. three cheese tortellini cooked
4c. cherry or grape tomatoes halved
3c. mozzarella cheese (cut in 1/2" cubes)
2-4 T. fresh basil (or dry can substitute)
1c. parmesan cheese (shredded)
Preparation
Whisk olive oil, vinegar, and garlic. Salt and pepper to taste. Toss with pasta, basil, tomatoes, and mozzarella chees. Top with parmesan prior to serving.
Serve chilled or warm.
