Ingredients
1lb Italian sausage
1 medium onion
2 carrots, sliced
1 med zucchini
1 yellow squash halved and sliced
Grated Parmesan cheese
3 c. water
1/2 tsp dried basil leaves
1/2 tsp dried oregano leaves
2 c. condensed tomato soup
8 oz (2 cups) uncooked dried (or frozen) cheese (or meat)-filled tortellini.
Preparation
Cook and stir sausage and onion in 4Q dutch oven until sausage is light brown and drain. Stir in remaining ingredients except cheese. Heat to boiling, reduce heat. Cover & simmer until vegetables and torellini are tender, about 20min. Serve with cheese.
