Ingredients

1 tbsp olive oil

1/2 cup onion,chopped

2 cloves garlic, minced

2 tomatoes, chopped OR 1 can (14 oz) diced tomatoes

8 oz chopped spinach, fresh or frozen (thawed if frozen)

8 oz tortellini, any flavor

4 cups chicken stock

Preparation

Heat oil in an 8 quart pan. Add onion and cook over medium-high heat until transluscent. Add garlic and cook 1 minute. Stir in tomatoes and spinach. Season with salt and pepper; cook 15 minutes. Stir in tortellini. Add chicken stock as needed to cover and desired consistency. Cook 5-10 minutes or until the tortellini are done.
