Ingredients
2 tbsp extra virgin olive oil
1 medium diced onion
1 small zucchini
1 medium carrots
5.5 cup canned chicken broth
1 tsp, leaves dried basil
1 leaf bay leaf
1/2 can, small (8 oz) canned crushed tomatoes
1/2 tsp salt
1 dash ground pepper
9 oz cheese tortellini
Preparation
Heat EVOO in sauce pan and add onion, zucchini and carrots. Saute over medium heat for 8-10 minutes Add stock, basil, bay leaf, tomatoes and s&p bring to a boil Add tortellini for 2 minutes the reduce and let simmer for 5-6 minutes
