Ingredients
10 Corn Tortillas
8 oz grated Monterrey Jack Cheese
1 c frozen corn
4 scallions sliced
2 eggs
1 c buttermilk
1 4oz dried green chiles(to taste)
Taco Sauce
Preparation
Preheat oven to 325 Grease a 2 qt baking dish. Tear tortillas into bite-sized pieces.Arrange 1/2 the tortillas in dish and cover with 1/2 of the cheese, 1/2 of the corn and 1/2 of the scallions. Dot with the taco sauce.Repeat the layers. Beat together the eggs, buttermilk and peppers. pour over the tortillas Bake uncovered for 30 minutes
