Ingredients

2 Jalapeno Peppers, seeded and diced

1 C Celery, chopped

1 C Onion, chopped

2 T Garlic, minced

2 T Olive Oil

2 C V8 Juice

2 Lg Can Stewed Tomatoes

1 C Cilantro, chopped

2/3 C Vegetable Broth

1 T Sugar

3 T Lime Juice

Preparation

Preheat broiler. Spray cookie sheet with Pam. Combine Jalapeno, celery, onion and garlic with oil; spread over pan and broil 10-15 minutes until vegetables are tender.

Blend cooked vegetables and juice with tomatoes, in food processor or blender until fairly smooth. Transfer to stock pot with rest of ingredients and reduce until desired consistency.

Serve hot with tortilla chips, cheese, sour cream, avocado and cilantro.
