Ingredients
1 oz. oil
¾ white or red onion, diced
1 tablespoon garlic
¾ pounds carrots, chopped
Tortilla chip strips
4 quarts chicken broth
1 tablespoon chili powder
1 tablespoon cumin
5 oz. tomato paste
1 ¼ jalapenos (optional)
½ bunch cilantro, chopped
salt & pepper to taste
1 avocado, cubed (optional)
1 cup chicken, shredded
1 cup Ranchero cheese, grated (okay to use cheddar cheese)
Preparation
- In a pot, over medium heat, brown the garlic to medium brown in the oil
- Add onions, carrots, cilantro, and spices. Sauté for 10 minutes.
- Add chicken broth and tomato paste. Cook for 30 minutes.
- Blend together in a blender for 2-3 minutes.
- Spoon soup into bowl. Add chicken, tortilla strips, avocado and cheese prior to service.
