Ingredients

1 oz. oil

¾ white or red onion, diced

1 tablespoon garlic

¾ pounds carrots, chopped

Tortilla chip strips

4 quarts chicken broth

1 tablespoon chili powder

1 tablespoon cumin

5 oz. tomato paste

1 ¼ jalapenos (optional)

½ bunch cilantro, chopped

salt & pepper to taste

1 avocado, cubed (optional)

1 cup chicken, shredded

1 cup Ranchero cheese, grated (okay to use cheddar cheese)

Preparation

  1. In a pot, over medium heat, brown the garlic to medium brown in the oil
  2. Add onions, carrots, cilantro, and spices. Sauté for 10 minutes.
  3. Add chicken broth and tomato paste. Cook for 30 minutes.
  4. Blend together in a blender for 2-3 minutes.
  5. Spoon soup into bowl. Add chicken, tortilla strips, avocado and cheese prior to service.
