Ingredients
2 tsp olive oil
1 tsp minced garlic
1 cup onions, diced or sliced
2 cups potatoes, cubed
1 cup English peas (optional)
1 cup mushrooms, sliced (optional)
Preparation
Heat oil over meadium heat in a large skillet. Add garlic and heat, stirring often. Add onions and brown. Add potatoes and stir until softened and cooked through. Next, either remove to a serving platter or continue adding complementary or optional items. Serve warm as a side dish.
